Being a mom is hard. Having a third-grader doing virtual school is hard. And it goes without saying being a single mama playing the middle between working a full-time job and entrepreneurship is hard. To help prevent burnout, wellness has become a priority for me and my family. So I’ve been implementing solutions that would help me simplify our lives and eliminate overwhelm.
Understanding that planning can be priceless, I’ve taken to prepping my daughter’s daily lunch. Going a bit further, my genius daughter suggested we create our version of the store-bought Lunchables. Pre-packing her lunch. Why didn’t I think of that?

Easy Lunch Planning
We start with a grocery list with various food groups including a variety of proteins, grains, starch, fruits, and veggies. Kids — especially my kid, are fickle and picky eaters. Today they love this food and tomorrow for some odd reason, they hate it. So when you allow your kids to help in the process, they will feel their lunch is that much more special. And you mama, will feel good knowing your child is getting a delicious choice of nutrition that they have made and love.
And because I’m all about keeping my family nourished and healthy, you can’t forget water to keep hydrated, vitamins and minerals to support the immune system. Plus, our friends over at PB&J introduced us to Crofter’s Organics fruit spreads, PBFit powdered peanut butter, and Oatsome oat milk which helps us make flavorful lunches and/or snacks that are healthy and kids like to eat. Use grocery delivery services like Amazon Fresh and Instacart to maximize your time and Bento Box containers to assembly lunch for each day.
